Simple Prune Jam Recipe
Ingredients:

2 cups dried prunes (about 300g)

1 cup water

1/2 cup sugar (adjust to your sweetness preference)

1 tablespoon lemon juice

1/2 teaspoon vanilla extract (optional)

A pinch of salt
Instructions:

Soak the prunes: Place the dried prunes in a bowl and cover with water. Let them soak for about 30 minutes to soften. Alternatively, you can simmer them in water for 10 minutes on the stove.

Cook the prunes: Drain the prunes (if soaked) and transfer them to a saucepan. Add 1 cup of water and bring it to a simmer over medium heat. Cook for 10–15 minutes until the prunes are soft and the water reduces slightly.

Mash the prunes: Once the prunes are softened, use a fork, potato masher, or immersion blender to mash them to your desired consistency. For a smoother jam, you can blend it until completely smooth.

Add sugar and lemon juice: Stir in the sugar, lemon juice, and a pinch of salt. Continue to simmer the mixture for another 10–15 minutes, stirring often. The jam will thicken as it cooks. If you prefer a thicker consistency, you can cook it a bit longer.

Finish the jam: Once it has reached your desired thickness, stir in the vanilla extract (if using). Let it cool down a little.

Store: Pour the prune jam into a sterilized jar while still warm. Seal and store in the fridge for up to 2-3 weeks.
